Healthy Eating: Recipe for Chinese-Style Glazed Chicken Breasts

Chinese-Style Glazed Chicken Breasts

Serve with asparagus and rice.


1/4 cup fat-free, less-sodium chicken broth
2 tablespoons hoisin sauce
1 tablespoon apricot preserves or fruit spread
4 (4-ounce) skinless, boneless chicken breast halves
1/2 teaspoon salt
1/8 teaspoon black pepper
1 tablespoon vegetable oil

Combine first 3 ingredients in a small bowl; set aside.

Place each chicken breast half between 2 sheets of heavy-duty plastic wrap; pound to 1/4-inch thickness using a meat mallet or rolling pin. Sprinkle chicken with salt and pepper.

Heat vegetable oil in a large skillet over medium-high heat. Add chicken, and sauté for 3 minutes on each side. Remove chicken from pan. Reduce heat; carefully stir in broth mixture. Return chicken to pan; cook 3 minutes or until done, turning to coat.

Yield:  4 servings (serving size: 1 chicken breast half and 1 tablespoon sauce)

Mark your calendar for Sept. 12 when fitness, fun and savings will all come together for a perfect family outing at the St. Peters Rec-Plex Fitness Fest.

The Fitness Fest will feature FREE admission to the St. Peters Rec-Plex, the first-ever City of St. Peters Family Fitness Walk and St. Louis Kids Magazine’s Kids Health and Education Expo.

Here is a breakdown of the activities at the Rec-Plex on Sept. 12:

• Enjoy FREE admission to the St. Peters Rec-Plex from 9 a.m.-3 p.m. Come for swimming, ice skating, volleyball, basketball, fitness facilities, fitness classes and more. Sign up as a new annual member and get the 13th month for free. (SEE SCHEDULE OF ACTIVITIES & CLASSES BELOW.)

• Bring two canned goods for an area food pantry and be part of the first-ever City of St. Peters Family Fitness Walk. The first 250 participants will receive a medal. Strollers and all ages and abilities are welcome. The Family Fitness Walk is being presented by the City of St. Peters in cooperation with GRG-Great Rivers Greenway, co-sponsor of Ken Burns’ sweeping documentary series The National Parks: America’s Best Idea, to be broadcast on KETC-TV from Sept. 27 through Oct. 4. Register in advance by calling 636.939.2FUN, ext. 400.

• The Kids Health and Education Expo sponsored by St. Louis Kids Magazine will offer FREE admission, FREE health screenings for kids, and lots of great giveaways, activities and entertainment for parents and kids. You could also win a door prize. The Expo, which will run from 10 a.m.-3 p.m. at Rec-Plex South, is one of St. Louis Kids Magazine’s most popular events for families with kids of all ages.

During Fitness Fest, your kids can enjoy the large heated family leisure pool, with its water play features, large whirlpool and 130-foot waterslide. The leisure pool will be open free from noon-3 p.m. A second pool has swimming lanes for adults as well as a spa and sauna.

The entire family can ice skate from 12:30-3 p.m. at the Rec-Plex’s NHL-size ice arena. The gymnasium also will be open for volleyball (9 a.m.-noon) and basketball (noon-3 p.m.).Fitness areas with cardio equipment and strength training machines and weights, plus the walking track, will open to anyone age 16 or up. Adults can try out the adults-only locker rooms with steam and sauna.

FREE group fitness classes, SPINNING® classes, Belly Dancing classes and more will be available throughout the event. Fitness Assessments also will be FREE for Rec-Plex Passholders during Fitness Fest.

All exterior flatwork is uniform and not extremely rough or uneven including porch and steps

Flatwork has no obvious low spots and has proper drainage away from home

Control joint edging and expansion joints are smooth and do not have excessive ridging

Driveway should have a vertical control joint at center and horizontal control joints

No cracks in exterior concrete exceeding 1/8”

No major honeycomb apparent on walls

All form boards removed

II. Exterior framing

Two-X and one-X wood trim is tight, smooth and neat (no sap or knot holes)

All exterior material and trim should be free of imperfections (holes, gouges, splintering and bowing)

House, foundation sill plate and foundation line up consistently

Roof appears to be installed correctly (flashing, roof vents, alignment of roofing material)

Deck seems to be installed correctly (handrails secure, floor firm)

Walls are level and not bowed

Doors, windows and wood siding are properly flashed

III. Exterior finishing

Installation of all exterior products neatly finished

Caulking required on all four sides of home (not required under horizontal trim or underside of siding)

Workmanship of all exterior products neatly finished

Exterior paint covers completely

Exterior finish of walls and foundation free of debris – dirt, concrete

INTERIOR

I. Interior concrete flatwork and foundation

Concrete flatwork is uniform and not rough or uneven
